Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    2 eggs
    1/2 chopped onion
    1 c. Cheddar cheese, diced
    1/2 c. milk
    1 c. bread cubes
    salt and pepper
Preparation
    Peel eggplant and parboil for 5 minutes.
    Combine eggs, milk, onions, cheese, bread cubes and seasonings.
    Add eggplant and mix well. Bake at 350\u00b0 for 30 minutes, or until top browns.
