Green Split Pea Soup - cooking recipe

Ingredients
    1 pkg. green split peas
    2 medium carrots, diced
    2 stalks celery, diced
    8 c. water
    salt and pepper to taste
Preparation
    Soak peas in cold water overnight.
    Sort and drain.
    Add water and bring to a boil.
    Skim off top and add vegetables.
    Simmer 2 or 3 hours, stirring from time to time.
    Add more water if necessary or
    if the soup is too thick.
    Season according to taste.
