Sweet Potato Puff - cooking recipe

Ingredients
    3 c. cooked and mashed sweet potatoes
    3 Tbsp. butter
    3/4 c. low-fat milk
    4 eggs, separated
    1/4 tsp. salt
    few grains pepper
Preparation
    Whip cooked potatoes with butter, milk and pepper.
    Beat in egg yolks.
    Whip egg whites with salt until stiff.
    Fold into potato mixture.
    Place in greased 1 1/2-quart casserole dish. Bake in a 375\u00b0 oven for 30 minutes or until top surface is lightly browned.
    Makes 4 servings.
