Hoppin John Soup(Kentucky Recipe) - cooking recipe

Ingredients
    1 lb. black-eyed peas (canned or frozen)
    1 to 1 1/2 c. rice
    2 stalks celery, chopped
    2 carrots, peeled and chopped
    1 large onion, chopped
    1 lb. pork sausage (hot or spicy)
    1 or 2 chicken bouillon cubes (optional)
Preparation
    Brown sausage and onion until color changes, breaking up sausage mixture. Add vegetables.
    Cook rice and add to the meat mixture along with the black-eyed peas. Cover with water or chicken broth about 1-inch above mixture. Salt and pepper. Cover and simmer about 2 hours. Most of the liquid should be absorbed.
