Ingredients

4 medium potatoes
1 medium onion
1 egg, lightly beaten
1 tsp. salt
1/4 tsp. nutmeg (optional)
1/4 tsp. white pepper
1/2 tsp. baking soda
butter (as needed)
Preparation

Wash and peel potatoes.
Then drop them into cold water and let stand 1 to 2 hours or overnight, if desired.
Grate potatoes with a fine grater and press to squeeze out excess liquid.
Peel and grate onion into the potatoes.
Add the egg, seasonings and soda.
Mix well.
Heat 1 1/2 teaspoons butter in a large skillet and add one spoonful of the mixture for each pancake.
They should not be too thick.
Cook gently until golden brown on the bottoms, then turn and brown the other side.
Add more butter to the skillet and continue cooking the pancakes until all the mixture is used.
Serves 4.
