Zucchini Bread - cooking recipe

Ingredients
    3 eggs, beaten
    2 c. sugar
    2 tsp. vanilla
    1 tsp. salt
    1 tsp. baking soda
    1 c. nutmeats, chopped
    1 c. oil
    2 c. raw zucchini, grated
    3 c. flour
    1/4 tsp. baking powder
    3 tsp. nutmeg or cinnamon
    1/2 c. raisins (if desired)
Preparation
    If raisins are used, put in saucepan with enough water to cover and bring to boil.
    Drain thoroughly.
    Place beaten eggs and sugar in a large bowl and mix.
    Then add oil; mix thoroughly.
    Add vanilla and zucchini.
    Then add dry ingredients.
    Bake in 2 regular size loaf pans at 375\u00b0 for 1 hour or until bread shrinks from side of pan.
