Wine And Cheese Muffins - cooking recipe

2 c. variety baking mix
2/3 c. white wine or apple juice
2 Tbsp. vegetable oil
1 egg
1 c. shredded Swiss, Gruyere or Cheddar cheese (4 oz.)
2 tsp. chopped fresh or freeze-dried chives
Preparation

Heat oven to 400\u00b0.
Line 12 medium muffin cups with paper baking cups, or grease entire baking cup generously.
Mix baking mix, wine, oil and egg with fork.
Beat vigorously 30 strokes. Stir in remaining ingredients. Divide batter evenly among cups. Bake about 20 minutes or until golden brown.
Yields 1 dozen muffins, 150 calories per muffin.
