Pinehurst Muffins - cooking recipe

Ingredients
    4 c. flour
    2 1/2 c. sugar
    4 tsp. soda
    4 tsp. cinnamon
    1 tsp. salt
    4 c. grated carrots
    1 c. chopped pecans
    2 apples, grated
    1 c. raisins
    1 c. coconut
Preparation
    Sift together flour, sugar, soda, cinnamon and salt.
    Stir in carrots, pecans, apples, raisins and coconut.
    In a bowl, beat 6 eggs, then add 2 cups Mazola oil and 4 teaspoons vanilla.
    Stir in flour/fruit mixture until combined.
    Spoon batter in well oiled muffin tins.
    Bake at 350\u00b0 for 20 minutes or until muffin springs back when touched.
    Let cool 5 minutes.
    Yields 36 regular sized muffins.
