Nine Day Pickles - cooking recipe
Ingredients

2 gal. whole cucumbers
1 pt. canning salt
1 gal. water
2 tsp. alum
2 1/2 qt. vinegar
8 c. sugar
2 tsp. celery seed
Preparation

Clean the cucumbers and place in a large glass or crock container.
Mix 1 gallon water and the salt and pour over the cucumbers.
Let stand one week.
Pour off the liquid and split the cukes.
Pour boiling water over the cukes to cover.
Let stand 24 hours and then pour off liquid.
Cover with more boiling water and add alum.
After 24 hours, pour off.
Heat remaining ingredients and pour over cucumbers.
Heat this liquid for three mornings and pour over cukes.
After the third day, place the pickles in sterilized jars and pour heated liquid over them and seal.
