Zucchini Nut Bread - cooking recipe

Ingredients
    4 eggs
    2 c. sugar
    1 c. vegetable oil
    3 1/2 c. unsifted flour
    1 1/2 tsp. baking powder
    1 1/2 tsp. salt
    1 tsp. cinnamon
    3/4 tsp. baking soda
    2 c. grated, unpeeled zucchini (approximately 1 large)
    1 c. walnuts, chopped
    1 c. raisins or dates
    1 tsp. vanilla
Preparation
    Beat eggs.
    Gradually beat in sugar, then oil.
    Combine all dry ingredients, adding alternately with zucchini.
    Stir in raisins or dates, walnuts and vanilla.
    Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.
    Bake on lowest rack at 350\u00b0 for 55 minutes.
    Cool on wire racks for 10 minutes.
    Freezes well after cool.
