Pineapple Carrot Cake - cooking recipe
Ingredients

2 c. grated carrots, loosely packed
1 1/2 c. oil
2 c. sugar
3 eggs
2 c. flour
2 tsp. cinnamon
1 Tbsp. baking soda
1 Tbsp. vanilla
1 tsp. salt
1/2 to 1 c. chopped nuts
1 (8 oz.) can crushed pineapple, strain juice
1/2 box or can flaked coconut
Preparation

Mix all cake ingredients together.
Pour into greased and wax papered 9 x 13 x 2-inch pan.
Bake at 350\u00b0 for 50 to 55 minutes. Cool.
Frost and sprinkle with coconut.
Cut into squares.
