Carrots In Cream - cooking recipe

Ingredients
    2 c. cream
    2 egg yolks
    4 Tbsp. butter
    1 tsp. sugar
    1/8 tsp. nutmeg
    minced parsley
    4 c. cooked, sliced carrots
Preparation
    Heat cream and egg yolks, butter, sugar and nutmeg.
    Cook slowly until thickened, stirring constantly.
    Fold into hot carrot slices and sprinkle with parsley.
    Makes 8 servings.
