Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1/2 c. mayonnaise
1 medium onion, chopped
1/2 c. mushroom soup
salt
pepper
1 egg
1/3 stick margarine
3/4 c. cracker crumbs
1 c. sharp Cheddar cheese
Preparation

Cook eggplant in small amount of water; drain and mash.
Add salt and pepper to taste and mix with all ingredients, except margarine, cracker crumbs and cheese.
Place in casserole dish. Cover with cheese and cracker crumbs.
Dot with margarine.
Bake at 350\u00b0 for 15 to 20 minutes.
