Potato Candy - cooking recipe

Ingredients
    1 medium potato
    pinch of salt
    2 lb. confectioners sugar
    2 Tbsp. butter
    1 tsp. vanilla
Preparation
    Peel and cook potato until tender; add salt, butter and vanilla while hot.
    Mash until fluffy.
    Add sugar gradually, stirring with spoon until mixture can be handled - pliable, but not too stiff to roll out.
