Salami - cooking recipe

Ingredients
    25 lb. ground meat (1/3 pork fat) *
    8 oz. Tender Quick
    6 Tbsp. brown sugar
    1/2 c. salt
    6 Tbsp. black pepper
    3 tsp. cardamon
    3 tsp. allspice
    3 tsp. garlic powder
    2 tsp. red pepper
    handful of peppercorns
Preparation
    * If beef tallow has already been added, use 18 pounds meat and 5 or 6 pounds pork.
