Emeril'S Pancakes - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking powder
    2 tsp. sugar
    1/2 tsp. salt
    2 c. buttermilk plus more (for thinning)
    1 egg, beaten
    1 Tbsp. vegetable oil plus 1/4 c. (for pan)
Preparation
    In large bowl, sift together flour, baking powder, sugar and salt. Add buttermilk, the egg and 1 tablespoon oil. (Lumps are ok.) Let batter stand, covered, in refrigerator for at least 1 hour. If necessary, thin with extra buttermilk after resting.
