Tomato Honey(Best And Most Versatile Preserves) - cooking recipe

Ingredients
    1 lb. yellow pear tomatoes
    boiling water to cover
    1 lb. sugar
    2 lemons, thinly sliced
    2 oz. preserved ginger, cut small
Preparation
    Let the tomatoes stand in boiling water until the skins slip off.
    Add sugar and let stand overnight.
    In the morning, drain the syrup and boil until fairly thick, then add tomatoes to lemons and ginger.
    Cook until tomatoes have a translucent look and the syrup is the consistency of honey.
    Cool!
    Fill jelly jars and store.
