Apricot Chicken - cooking recipe

1 (10 oz.) jar apricot preserves
1/4 c. lemon juice
2 tsp. soy sauce
1/2 tsp. salt
2 to 3 chicken breasts
1 c. dry bread crumbs
1/4 c. butter or margarine, melted
Preparation

Preheat oven to 350\u00b0. In shallow dish, combine preserves, lemon juice, soy sauce and salt. Coat chicken with mixture.
Roll chicken in bread crumbs. Reserve remaining apricot mixture. Arrange chicken in 13 x 9-inch baking dish and drizzle with melted margarine. Bake, uncovered, 45 minutes or until tender. In small saucepan, simmer remaining apricot mixture 5 to 10 minutes. Pour over chicken before serving.
