Ingredients

4 large potatoes (about 3 lb.)
2 eggs
1/2 c. finely diced onion
1/2 c. flour
1 tsp. salt
dash of pepper
salad oil
maple syrup or applesauce
Preparation

Peel and grate potatoes; place in colander to drain.
Place potatoes in bowl.
Beat eggs; add to potatoes with flour, salt and pepper.
Mix.
Heat oil in skillet until hot.
Drop potato mixture into oil by spoonfuls.
Fry until golden brown.
Turn and fry other side.
Place on paper toweling to drain.
Keep warm.
Serve with syrup or applesauce.
Makes about 16 pancakes.
