Apple And Cheddar Gratin - cooking recipe

Ingredients
2 lb. Granny Smith apples, peeled and cut into 1/4-inch slices
    1/2 c. raisins
    1/2 tsp. cinnamon
    1/4 ??? fresh lemon juice
3/4 c. firmly packed dark brown sugar
    1/2 c. all-purpose flour
    1/8 tsp. salt
1/2 stick cold unsalted butter, cut in bits
1 c. finely grated extra sharp Cheddar
Preparation
In a well-buttered 1-quart shallow baking dish, arrange the apple slices and sprinkle them with the raisins, the cinnamon and the lemon juice.
In a small bowl, combine the sugar, the flour and the salt.
Blend in the butter until the mixture resembles coarse meal (I use the food processor for this) and toss the mixture with the Cheddar.
Sprinkle the Cheddar mixture over the apple mixture and bake the gratin in the upper third of a preheated 350\u00b0 oven for 30 minutes or until the apples are tender. Serve the gratin as a dessert or as an accompaniment to roast pork or ham.
    Serves 4 to 6.
