Lemon Ricotta Cheese Frosting - cooking recipe

Ingredients
    1/3 c. low-fat Ricotta cheese
    3 Tbsp. polyunsaturated margarine
    2 Tbsp. lemon or orange juice
    1/2 to 1 tsp. shredded lemon or orange rind
    4 c. xx sugar
Preparation
    Combine sifted xx sugar.
    Combine cheese, margarine, juice and rind, beating until smooth.
    Beat in xx sugar as needed for consistency for spreading.
