Ingredients

2 lb. carrots
1 1/2 c. water
1 tsp. salt
1 tsp. grated orange rind
1/4 c. butter or margarine
1/4 c. brown sugar
1/2 tsp. ground cardamom (optional)
Preparation

Peel carrots.
Cut in quarters lengthwise and in half crosswise.
Can use baby carrots.
Bring water and salt to a boil; add carrots.
Cover and cook 10 to 15 minutes or until tender; drain.
Add remaining ingredients to carrots.
Gently stir over low heat until butter is melted and carrots are glazed.
