Apricot Chicken - cooking recipe

Ingredients
    4 chicken breasts (3 oz. each)
    2 c. sliced mushrooms
    1 onion, chopped
    1 c. low-sodium chicken broth
    12 dried apricot halves, julienned
    1/4 tsp. nutmeg
    1 Tbsp. cornstarch
    2 Tbsp. apricot brandy
    4 c. noodles
    2 Tbsp. chopped pecans
Preparation
    Spray pan with cooking spray and brown chicken for 2 minutes on each side; remove from skillet. Re-spray pan and cook mushrooms and onions until soft. Add apricot halves, chicken broth, nutmeg and chicken breasts and simmer 6-8 minutes. Mix cornstarch and brandy and add to mixture. Serve over noodles.
