Cookiewiches - cooking recipe

Ingredients
    6 sq. (1 oz. each) semi-sweet chocolate
    16 (3-inch diameter) favorite cookies
    1/3 c. chopped peanuts
    1 pt. favorite ice cream, slightly softened
Preparation
    Line
    large
    baking
    sheet with waxed paper; set aside. In small
    saucepan,
    over
    low heat, melt chocolate, stirring until smooth.
    Using tongs, dip cookies into chocolate; shake off excess.
    Place
    flat
    down
    on
    prepared
    baking
    sheet. Sprinkle top
    of
    cookies
    with peanuts.
    With metal spatula, spread ice cream
    on flat side of each of 8 cookies, dividing evenly.
    Top with one of remaining cookies, placing flat side on ice cream. Press lightly.
    Wrap each sandwich with plastic wrap.
    Freeze until firm.
    Makes 8 servings.
