Brains And Eggs - cooking recipe

Ingredients
    frozen pork brains
    oil or butter
    beaten eggs
    salt and pepper to taste
Preparation
    Pick when tender in early spring (do not use after it gets big).
    Wash real good and put in large pot filled 1/2 full of water.
    Bring to a boil.
    Pour off this water and drain real good. Put some more water in poke salad.
    Add ham hock (or vegetable oil) and salt.
    Let cook on low heat until tender.
    May put boiled eggs in to take out some of the bitter taste.
