Orange-Glazed Sweet Potatoes - cooking recipe

4 medium-sized sweet potatoes
1 Tbsp. grated orange rind
1/2 c. orange juice
3 Tbsp. brown sugar
3 Tbsp. sugar
1 1/2 tsp. cornstarch
1 1/2 Tbsp. margarine
1/8 tsp. salt
Preparation

Cook sweet potatoes in boiling water for 20 to 25 minutes or until tender.
Allow potatoes to cool to touch; peel and slice. Arrange slices in a lightly greased 1 1/2-quart baking dish. Combine the remaining ingredients in a small saucepan.
Cook, stirring constantly until thickened.
Pour glaze over sweet potatoes.
Bake, uncovered, at 350\u00b0 for 30 minutes.
Yield: 5 to 6 servings.
