Caribbean Bananas - cooking recipe

Ingredients
    2 Tbsp. butter
    2 medium ripe bananas
    1/4 c. sauce cockaigne (following)
    1/4 c. warm dark rum or liquor
Preparation
    Melt butter.
    Peel bananas and split lengthwise.
    Simmer banana gently in butter, both sides.
    Baste with sauce.
    Serve on hot plate.
    Pour rum or liquor over bananas and light.
    Can use bananas, peaches or pears.
