Mexican Corn Bread - cooking recipe
Ingredients

1 1/2 c. yellow corn meal
1 tsp. salt
3 eggs, beaten
1 can small Ortega chili peppers
1/2 c. chopped onions
3 tsp. baking powder
1 c. buttermilk
2/3 c. oil
1 c. grated Cheddar cheese
1 c. cream-style corn
Preparation

Mix all ingredients except onions and cheese, and pour half of batter in 12-inch iron skillet.
Sprinkle half of cheese and all chopped onion over batter.
Then pour rest of batter over onion and cheese.
Sprinkle remaining cheese over top.
Bake at 400\u00b0 until well done, approximately 25 minutes.
