Potato Cookies - cooking recipe

Ingredients
    1 pkg. buttermilk biscuit mix
    1 pkg. instant mashed potatoes
    1 1/2 c. sugar
    2 eggs
    1 stick margarine, softened
    1 1/2 tsp. coconut extract
Preparation
    Mix all ingredients together.
    Batter will be stiff.
    Let dough chill for 1 hour in \"fridge.\"
    Shape dough into marble size balls and place about 2-inches apart on ungreased cookie sheet. Bake 12 to 14 minutes at 350\u00b0.
    (These really taste like coconut cookies.)
