Ingredients

2 (16 oz.) cans sliced beets
3/4 c. white vinegar
3/4 c. beet water
2 Tbsp. sugar
3 whole cloves
1/2 tsp. salt
4 peppercorns
1 small bay leaf
1 medium onion, sliced
1 green pepper, sliced
Preparation

Drain contents of cans of sliced beets, reserving the juice. Place beets in a 32 ounce pickle or fruit jar with a wide top.
