Molasses Muffins - cooking recipe
Ingredients

1 1/4 c. butter, margarine or Crisco (or parts of each)
1 c. sugar
4 eggs
1/2 c. molasses
1 tsp. soda
1 tsp. baking powder
1 c. buttermilk
4 c. all-purpose flour
1/2 tsp. cinnamon
1/4 tsp. ginger or nutmeg
1 tsp. vanilla
chopped nuts (optional)
chopped raisins (optional)
Preparation

Cream butter, sugar and eggs until light and fluffy.
Add molasses and blend.
Add soda to buttermilk and set aside.
Combine flour, baking powder and spices.
Add to creamed mixture, alternating with buttermilk.
Add vanilla, nuts and raisins, if desired.
Bake in greased muffin pans at 350\u00b0 about 25 minutes. Makes 18.
Good with a lemon glaze.
