Special Coffee Spice Cake - cooking recipe

1/2 c. shortening
1/2 c. sugar
2 eggs
1 c. molasses
2 1/2 c. all-purpose flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cloves
1 c. Millstone Bed and Breakfast gourmet coffee, brewed and double strength
Mocha Whipped Cream
Preparation

Heat oven to 350\u00b0. Grease and flour a 13 x 9-inch pan. Combine shortening and sugar. Beat until well blended. Beat in eggs and molasses.
Mix well. Combine flour, baking powder, cinnamon, ginger, salt, baking soda and cloves.
Add to shortening mixture alternately with coffee. Pour into prepared pan.
Bake for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan and cool on wire rack.
Serve with Mocha Whipped Cream.
Makes 12 servings.
