Peanut Butter Oatmeal Cookies - cooking recipe

Ingredients
    1 c. all-purpose flour
    1/2 tsp. baking soda
    1/2 c. margarine
    1/2 c. peanut butter
    1/3 c. sugar
    1/3 c. brown sugar
    1/2 c. shredded carrots
    2 egg whites
    1/2 tsp. vanilla
    1 c. rolled oats
Preparation
    In a bowl, stir together flour and baking soda.
    In a large mixer bowl, beat margarine with electric mixer on medium speed for 30 seconds.
    Add peanut butter, sugar and brown sugar.
    Beat until fluffy.
    Add carrot, egg whites and vanilla.
    Beat well.
    Add dry ingredients to beaten mixture.
    Beat until well combined.
    Stir in oats.
    Drop dough by rounded teaspoonfuls 2-inches apart onto a nongreased cookie sheet.
    Bake in a 375\u00b0 oven about 10 minutes or until done.
    Remove cookies from cookie sheet.
    Cool on wire rack. Makes 48 cookies (24 servings).
