Coconut Thumbprint Cookies - cooking recipe

Ingredients
    1/2 c. butter or butter flavored Crisco
    1/2 c. sugar
    1 egg, separated
    3/4 c. unsifted all-purpose flour
    1 tsp. vanilla
    1/4 tsp. salt
    1/4 tsp. baking powder
    2/3 c. flaked coconut
    1/4 c. thick preserves, jam and jelly
Preparation
    Preheat oven to 375\u00b0.
    Grease baking sheets.
    Cream butter with sugar, egg yolk and vanilla.
    Combine flour with salt and baking powder.
    Add to creamed mixture.
    Blend well and form into bars about 1-inch in diameter.
    Beat egg white until slightly frothy.
    Dip dough balls into egg white, then roll in coconut. Place on greased baking sheets.
    Make a \"thumbprint\" in the center of each cookie and spoon 1/2 teaspoon of preserves into each. Bake at 375\u00b0 for 8 to 9 minutes or until coconut begins to brown. Yields 2 dozen cookies.
