Sausage Casserole - cooking recipe
Ingredients

1/2 lb. diced potatoes
1/2 sliced red, yellow and green peppers
1 small diced onion
1 pkg. hot/mild sausage
3 eggs
Preparation

Fry sausage in skillet.
Pour 1 tablespoon sausage oil into potatoes for frying. Add peppers and onion.
Cover until potatoes are done. Add the eggs. Mix constantly until eggs are cooked in. Tastes great with toast.
Serves 4 people.
