Tabouli - cooking recipe

Ingredients
    3 c. boiling water
    1 1/2 c. bulgur wheat, washed and drained (can be purchased at health food store)
    1 medium onion, finely chopped
    2 large tomatoes, diced
    1 large green pepper, finely chopped
    1/2 c. olive oil
    1/2 c. white wine vinegar
    1 tsp. salt
    1/2 tsp. sugar
    2 Tbsp. lemon juice
    1/2 c. fresh parsley, finely chopped
    1/2 tsp. garlic powder
    1/2 tsp. dried basil
    1/2 tsp. dried tarragon
    3 Tbsp. fresh mint, finely chopped or 3 tsp. dried mint, crumbled
Preparation
    Pour boiling water over wheat in a large bowl and let stand for 2 to 3 hours or until water is absorbed.
    Mix onion, tomatoes, green pepper and parsley into the wheat.
    Mix remaining 9 ingredients in a jar and shake well.
    Pour over wheat mixture and toss.
    Cover and refrigerate 4 to 6 hours or overnight to allow flavors to blend.
    Keeps well for 2 to 3 days.
    This refreshing and healthy mix is great with Fritos or tortilla chips.
    It's also great when served in pocket bread (pita or Arabic)!
    Yields 6 cups.
