Portuguese Potato Casserole - cooking recipe

Ingredients
    8 to 10 baking potatoes, boiled in jackets
    1 lb. Velveeta cheese
    1/2 c. chopped onion
    1 small jar pimentos (optional)
    1 box salad croutons
    1 1/2 sticks margarine, melted
    parsley, paprika and onion salt
Preparation
    Cube cooled cooked potatoes; do not peel.
    Cube cheese and mix with potatoes in large casserole dish.
    Add onion, pimento and parsley.
    Top with croutons and pour melted margarine over top. Season with paprika and onion salt.
    Bake at 350\u00b0 for 15 minutes, until cheese is melted.
