Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1/2 c. cream of mushroom soup
    1/2 c. mayonnaise
    1 egg, beaten
    1 onion, chopped
    3/4 c. Ritz crackers, crushed
    1 c. Cheddar cheese, grated
Preparation
    Peel, cube and cook eggplant; drain and mash.
    Mix with soup, egg, onion, mayonnaise, 1/2 of cheese and 1/2 of cracker crumbs. Pour in buttered 2-quart casserole dish.
    Top with remaining cheese and cracker crumbs.
    Bake at 350\u00b0 for 35 minutes.
