Carrot Bread - cooking recipe
Ingredients

2 c. all-purpose flour
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. sugar
1 c. salad oil
1 tsp. vanilla
2 c. finely grated carrots
3 eggs
1/2 c. raisins
1/2 c. flaked coconut
1/2 c. chopped nuts
Preparation

Combine flour, baking powder, cinnamon, salt and sugar in mixing bowl.
Add salad oil, vanilla, carrots and eggs.
Mix until well blended.
Fold in raisins, coconut and nuts.
Pour into a greased 9 x 5 x 3-inch loaf pan.
Bake at 350\u00b0 for 1 hour and 15 minutes.
Turn out of pan and cool on rack.
Do not slice until bread has cooled completely.
Yield:
1 loaf.
