Black-Eyed Chicken Salad - cooking recipe

Ingredients
    1 can (15 oz.) black-eyed peas
    2 c. diced, cooked chicken or turkey
    1 medium red onion, finely chopped
    1 green pepper, finely chopped
    1 c. celery, finely chopped
    1 red pepper, finely chopped
    1 c. cooked, sliced mushrooms
    1/2 c. pimento stuffed olives
    1 c. mayonnaise
    1/2 tsp. salt
    1 c. grapes, halved (optional)
Preparation
    Drain peas; add all ingredients and gently blend in mayonnaise and salt.
    Serve on lettuce cup.
    Great for leftover turkey.
