Cheese Enchiladas - cooking recipe

Ingredients
    1 lb. ricotta cheese
    1 egg
    1 c. green onions, chopped
    2 tsp. green chilies, chopped
    1 tsp. cumin
    1 c. jack cheese, shredded
    8 flour tortillas
    1 - 10 oz. can enchilada sauce
    2 c. cheddar cheese, shredded
    sour cream
Preparation
    Mix first 6 ingredients together. Heat each tortilla in microwave about 20 seconds. Spread on 1/8 of filling and roll up. Place seam side down in greased 12 x 8 inch dish. Pour sauce over rolls. Cover dish and microwave at high for 12 minutes. Cover with cheddar cheese. Microwave at high for another 1 to 2 minutes. Serve with sour cream garnish.
