Rotel Chicken - cooking recipe

Ingredients
    1 medium onion, chopped
    1 can Ro-Tel, chopped
    2 lb. Velveeta cheese, sliced
    2 c. quick cooking rice
    1 bag taco or Ranch flavored Doritos
    1 whole cooked chicken
    1 can cream of celery soup
    2 c. chicken broth
    butter
Preparation
    Finely chop and saute onions.
    Cook rice in chicken broth. Remove chicken from bone.
    Add Ro-Tel and celery soup to sauteed onion; simmer until smooth.
    Butter casserole dish and line with rice.
    Pour Ro-Tel, celery soup and onion mixture over rice. Slice Velveeta and top casserole.
    Sprinkle with crushed Doritos. Bake at 350\u00b0 until cheese is well melted, about 10 to 15 minutes. Serve with Mexican corn and cornbread.
