Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and cubed
    2 Tbsp. margarine
    1/2 c. bread or cracker crumbs
    1 tsp. salt
    1/4 tsp. pepper
    1/4 c. milk
    1 egg, beaten
    1/2 c. American cheese, grated
Preparation
    Cook eggplant in small amount of boiling, salted water until tender. Drain and mash.
    Add margarine, bread crumbs, salt, pepper, milk, beaten egg and 1/4 cup grated cheese.
    Mix well. Pour into buttered casserole. Top with remaining cheese. Bake at 350\u00b0 for about 20 minutes.
