Shrimp Creole - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 large onion, chopped
    1 clove garlic, minced
    1 1/2 c. celery, chopped
1 (16 oz.) can tomatoes, mashed
1 (15 oz.) can tomato puree
    1 tsp. sugar
    2 bay leaves
    1/4 tsp. rosemary
    1/4 tsp. basil
    dash of Worcestershire sauce
    dash of cayenne pepper
    salt and pepper to taste
1/2 c. white wine or water (as needed)
1 lb. medium shrimp, cooked and peeled
1 small bell pepper, cut into rather large squares
Preparation
Add olive oil to a large, hot skillet and saute the onion, garlic and celery until soft. Add all of the rest of ingredients (except shrimp and bell pepper) and simmer for 45 minutes or as long as 1 1/2 hours. You may have to thin it now and then with a bit more wine or water. About 20 minutes before serving, add the bell pepper. Add the shrimp and simmer for 3 to 4 minutes or until warm. Remove bay leaves and serve with hot, fluffy rice. Makes 4 servings.
