Grated Potato And Egg Gratin - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. olive oil
    1 small finely chopped onion
    1 clove garlic, finely minced, with 1/2 tsp. salt
    4 eggs
    1/4 pt. heavy cream
    4 oz. grated Swiss cheese
    4 medium potatoes, peeled and grated
    salt and pepper
Preparation
    In pan, melt 1/2 of the butter with the oil. Add garlic and onion; fry until soft.
    Transfer to a bowl. Add eggs; beat well. Stir in cream, cheese, salt and pepper.
    Grate the potatoes and squeeze to get out as much moisture as possible.
    Pat dry with paper towels. Stir in egg mixture.
    In ovenproof dish, put remaining butter. In preheated oven (400\u00b0) heat until melted and very hot.
    Pour in egg and potato mixture. Bake for 25 to 30 minutes or until firm.
    Serve immediately.
    Sliced tomatoes are good served with this.
