Vegetable Provencale - cooking recipe

Ingredients
    2 medium onions, sliced and separated into rings
    2 cloves garlic, minced
    1 medium to large zucchini, peeled and cut into 1-inch cubes
    2 small summer squash, peeled and cut into 1-inch cubes
    2 green peppers, cut into strips
    2 large tomatoes, cut into 1-inch pieces
    1 tsp. salt
    1 tsp. basil
    pepper to taste
    Parmesan cheese, grated
Preparation
    In a large skillet, cook onions and garlic over medium heat until soft.
    Stir in zucchini, summer squash and green peppers. Cook about 20 minutes.
    Add remaining ingredients, except cheese. Cook about 10 minutes more.
    About 1 minute before done, sprinkle liberally with cheese and mix in.
    Serves 4 to 6.
