Zucchini Salad - cooking recipe
Ingredients

1/2 c. pickle relish (sweet variety)
2 Tbsp. cider vinegar
1 Tbsp. sugar
1/2 tsp. salt
1 lb. small zucchini, sliced
romaine or other lettuce leaves
Preparation

In a medium bowl stir relish, vinegar, sugar and salt; add zucchini.
Toss gently.
Cover and refrigerate about 30 minutes, tossing occasionally.
Line bowl with lettuce.
Spoon zucchini mixture into bowl.
