Orange Roughy With Veggies - cooking recipe

Ingredients
    4 orange roughy fish fillets
    3 Tbsp. olive oil
    2 small zucchini, thinly sliced
    1 medium onion, sliced
    1/4 lb. mushrooms, sliced
    2 fresh tomatoes, sliced or 1 (14 oz.) can stewed tomatoes
    1 tsp. dried basil
    salt and pepper
    1/2 c. grated Parmesan cheese
Preparation
    Heat oil in skillet; add onion, zucchini, mushrooms and basil. Saute for 4 minutes.
    Sprinkle fish with salt and pepper and place fillets over vegetables in skillet.
    Arrange tomato slices over the fish.
    Cover the skillet and simmer 8 or 9 minutes or until the fish flakes with a fork.
    Uncover the skillet and sprinkle the cheese over the top.
    Cover again and cook until the cheese melts.
    Serve immediately.
    Serves 4.
