Potato Skin Appetizer - cooking recipe

Ingredients
    4 large baking potatoes
    oil
    2 Tbsp. butter or margarine
    1/2 c. shredded Cheddar cheese
    salt
    pepper
Preparation
    Scrub potatoes; rub with oil.
    Prick potatoes with fork and bake at 375\u00b0 for 1 hour until tender.
    Cool slightly.
    Cut potatoes into halves lengthwise.
    Scoop out interiors.
    With scissors, cut skins lengthwise into strips.
    Brush insides of skins with butter.
    Sprinkle with cheese, salt and pepper.
    Place on ovenproof platter.
    Preheat broiler.
    Slip skins under heat until cheese melts.
