Gazpacho - cooking recipe

Ingredients
    4 c. low sodium tomato juice
    1/3 c. red wine vinegar
    2 Tbsp. chopped fresh or freeze dried chives
    1/4 tsp. ground red pepper
    2 medium tomatoes, chopped
    1 medium cucumber, chopped
    1/2 c. chopped onions
    2 cloves garlic, crushed
    1 c. low sodium croutons
    1 medium green pepper, chopped
Preparation
    In large bowl, stir together tomato juice, vinegar, chives and red peppers.
    Stir in tomatoes, cucumbers, green peppers, onion and garlic.
    Chill 3 hours or until serving time.
    Serve with low sodium croutons.
